Why We Started Volunteer Greens
We started Volunteer Greens with a simple belief: fresh food shouldn't travel thousands of miles to reach your table.
After seeing how long grocery store produce sits on shelves—losing nutrients by the day—we knew there had to be a better way. Microgreens offered the perfect solution: ultra-fresh, incredibly nutrient-dense, and able to be grown right here in Greeneville.
We're passionate about health, agriculture, and building a stronger local food system. Every tray we grow is a step toward making fresh, clean food accessible to our community—without the pesticides, preservatives, or week-old inventory.

Michael Fox
Founder & Grower — Volunteer Greens
I founded Volunteer Greens with one simple belief: our community deserves better food than what's sitting on grocery store shelves for days.
Growing up around agriculture and working in emergency services, I've seen firsthand how nutrition directly affects energy, recovery, and long-term health. That connection pushed me to study controlled-environment growing and microgreens — some of the most nutrient-dense foods on the planet.
Volunteer Greens began as a small-scale project focused on clean growing, zero pesticides, and harvest-to-order freshness. Today, every tray we grow is a reflection of that original mission: grow it clean, grow it local, and deliver it at peak nutrition.
This isn't factory food. This is intentional food — grown right here in East Tennessee for people who care about what they put in their bodies.
